Rapid and Delicious
  • > Tuna Stuffed Tomatoes
Ingredients:
  • 1 can 200 g of Bom Petisco Tuna
  • 4 Tomatoes
  • 2 Cucumbers
  • 2 Carrots
  • 4 Boiled Eggs
  • 4 dl of Olive oil
  • 1 Parsley sauce
  • Salt q.b.
  • Pepper q.b.
Preparation:
  • 1. Chop the cucumber and the carrot in fine slices.
  • 2. Cut the top part of the tomato. Remove the interior with a spoon, adding the pulp to the chopped vegetables and mixing them altogether.
  • 3. Place the boiled egg yolks in a bowl, add the Olive oil and stir it with a fork until you obtain a homogeneous mixture. Add all the ingredients and the shredded tuna, mixing them well. Correct the salt.
  • 4. Chop the boiled egg whites and add them to the mixture along with two spoon of mayonnaise, some chopped parsley and fill the tomatoes with the mixture. Finish with a bit of salt flower and grain pepper.
