Ingredients:
For the pancakes:
1 Cup of self-rising flour
Salt q.b.
2 Eggs
1¼ Cup of milk
1 tablespoon of butter for the frying pan
For the stuffing:
100 g of Béchamel
1 Courgette
2 Cans of Tuna
Pepper q.b.
Salt q.b.
Grated Cheese q.b
Preparation:
1. To prepare the pancakes, mix all the ingredients well, let the pastry rest for 2 hours in the fridge.
2. Slice the courgette and fry it in an antiadherent frying pan with a string of olive oil.
3. Heat up the béchamel sauce, and add the tuna and the courgettes.
4. Heat up the butter in a frying pan, put a spoon of pastry to fry and let it gain consistency, arrange the sides so that it won't stick and turn it so the other side cooks as well.
5. To finish spread the stuffing and roll it, save some béchamel to put on top of the pancakes and spread the grated cheese. Put it in the preheated oven at 180 ºC for approximately 10 minutes.
